HOUSTON  – Russo’s Restaurants, the founders of dining concepts that includes Russo’s New York Pizzeria and Russo’s Coal-Fired Italian Kitchen, announced today plans to significantly enhance the brands’ footprint in Houston by offering franchise options for a new counter-service model.

Evidencing the excitement around both brands, Chef Anthony Russo will be discussing the next generation pizza and Italian fresh, scratch kitchen concept in Booth 320 at The Franchise Expo at NRG Park May 20 and 21.

The new store design features counter service and an open kitchen with pizza and pasta station service showcasing the use of premium ingredients to prepare menu items fresh from scratch within 15 minutes.

“This design, combined with our chef-driven cuisine, includes our classic pastas to the new menu items that are unique like prosciutto and arugula pizza, truffle mushroom pizza and then our gourmet soups and salads – and all made to order in less than 15 minutes using only the freshest ingredients – perfect for home delivery and catering opportunities,” Chef Russo said. “The new store design is very attractive to new franchisees for a variety of reasons. The size of this concept can range from 1,200 square feet to 1,500 square feet yet still offering gourmet menu items allowing franchisees to drive more sales in their first year in business.”
