Pumpkin Pizza

Ingredients:

  • 6 oz. fresh pumpkin puree
  • 2 tbs. brown sugar
  • 1 1/2 tbs. fig preserve
  • 4 oz. mascarpone cheese
  • 1 1/2 tsp. sugar
  • 1/2 tsp. ground cinnamon
  • 1 9 oz. prepped pizza dough
  • 6 each fresh figs (black)


Directions:

Preheat oven to 450 degrees F. In a mixing bowl combine pumpkin puree, brown sugar and cinnamon.  Whisk well. Using your hands, stretch dough into an evenly thick circle with a small lip at the edges.


Spread fig preserve evenly over the dough, then spread pumpkin puree leaving a 1'' thick circle around the edges.


Place on a baking sheet and bake in the pizza oven until the crust is crisp and cooked through (about 12 to 15 minutes).


Remove from the oven and let cool for 2 minutes. In a separate mixing bowl, combine mascarpone cheese, sugar, vanilla extract and mix well.


Fill up the mascarpone mixture in a pastry decorating bag and pipe the mixture evenly over the pizza.Slice figs in half and arrange evenly over the pizza.


Using a pizza cutter slice the pizza into 8 equal slices.

Cook Time: 15 minutes
